ST. JOHN BREAD AND WINE

Fergus Henderson's: Nose to Tail Eating and The Whole Beast.
St. John Bread and Wine's books are nothing less than the dining experience itself. Summarized elegantly by Robin Davidson: "...Henderson serves up the inner organs of beasts and fowls in big, exhilarating dishes that combine high sophistication with peasant roughness. Nose to Tail Eating is a collection of these recipes, celebrating, as the title implies, the thrifty rural British traditions of making delicious virtue out of using every part of the animal."

St. John is an epitome of classic British eatery, including menus like Ox Heart, Ruby Chard & Pickled Walnut, Snails & Bacon, Calves Brain, Capers & Parsley, and for long-table celebrations, the whole pig from nose to tail served in a silver platter.
Located at 94-96 Commercial Street, London E1 6LZ. (Tube Liverpool Street or Aldgate East) and 26 St. John Street, London EC1M 4AY (Tube Farringdon Station)
Books are available in Amazon UK (Price: £16.99, £13.97). Also available, St. John dining voucher increments of £100.
(ps: don't forget to pick up those elegant matches on the way out)

I had the good fortune to hear about this place through a friend of mine in London during a short visit there with my girlfriend. It was incredible. And indeed, the large party situated at the center of the restaurant (celebrating a birthday party) had ordered a whole pig... the birthday boy got the animal's head served on a plate. This place has achieved a perfect balance in the rustic aesthetic - a chunk of beast has become simply elegant.
